•   4 ripe bananas
•   ⅔ cup maple syrup
•   ¼ teaspoon ground cardamom
•   ½ cup fresh orange juice
•   ⅔ cup chopped or slivered almonds
•   4 tablespoons butter or margarine, melted
•   Fresh grated coconut or toasted, unsweetened dried coconut for sprinkling (optional)

Instructions

1.  Preheat your oven to 400°F (200°C).
2.  Peel the bananas and slice them lengthwise. Lay them evenly in a baking dish.
3.  In a bowl, combine the maple syrup, orange juice, ground cardamom, almonds, and melted butter or margarine. Mix thoroughly.
4.  Pour this mixture over the bananas.
5.  Bake for 30 minutes.
